Windshield replacement requires specific tools — suction cups for handling the glass without touching the adhesive surface, proper removal tools that do not damage the frame, and a clean environment. A workshop doing windshield work on the pavement outside, with improvised tools, is a different category from one with a clean bay and proper equipment. You can usually assess this in 30 seconds of walking around the workshop.

A workshop that stands behind its work offers a warranty on both the glass and the fitting. For windshield replacement, a reasonable warranty covers workmanship defects — leaks, seal failures, glass lifting — for a minimum of 6 months to 1 year. If a workshop does not offer any warranty, that tells you something about how much confidence they have in their own work.
Different car makes have different windshield profiles, some with sensors, heated elements, or HUD integration in the glass. A workshop that mostly handles older Indian-made cars may not have experience with a newer European or Japanese model. Ask directly if they have fitted glass for your specific car before. Look specifically for mentions of leaks after replacement, glass quality, and whether problems were resolved when reported back.
